Burrito Bowl Seasoned Rice

This lightly seasoned rice is super easy to make and really hard to mess up. Makes the perfect base for a burrito bowl or burrito or a side for many dishes. It’s also totally clean and vegan, so it’s suitable for most diets.

Ingredients

  • 2 cups brown rice
  • 2 1/2 cups water
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 Tbs olive oil

Directions

  1. Add all ingredients to the Instant Pot and stir
  2. Close lid and set pressure cook for 22 minutes
  3. Allow 10 minutes before releasing pressure (or allow pressure to release naturally, depending on your time constraints)
  4. Fluff rice and serve
