Vegan Taco Filling

TVP Taco Filling (Textured Vegetable Protein)

Ingredients

  • 1 cup TVP
  • 1 medium onion
  • 15oz can diced tomatoes
  • 1/2 cup corn kernels (frozen, canned or fresh)
  • 1 Tbs olive oil
  • 3/4 cup water
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp organo
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Heat olive oil over medium heat in a large sauté pan
  2. Dice onion and add to pan. Sauté for 3-5 minutes
  3. Add the TVP and toast in pan for about a minute
  4. Add the tomatoes and stir
  5. Combine the spices and stir, then add the water and mix
  6. Pour the spice mixture over the TVP mixture and stir
  7. If using frozen corn, heat up in the microwave for about 40 seconds. Stir the corn into the taco mixture.
  8. Let it all warm and cook in the pan for at least two minutes.
  9. It’s ready to serve
  10. * This filling keeps well in the fridge and can be served cold as a dip with chips!
