Oatmeal Banana Raisin ‘Cookies’

  • 1 Cup Rolled Oats
  • 2 Medium Bananas
  • 1/4 Cup Raisins
  • 2 tsp Cinnamon 

Preheat oven to 375 degrees and line a baking sheet with parchment paper.  In a medium mixing bowl, begin by mashing the bananas so they are nice and gooey.  Stir in the rolled oats to thoroughly coat with the banana.  Add the cinnamon and mix well.  Finally, add the raisins and mix them in evenly.  Now you will drop 8 large spoonfuls onto the cookie sheet. Press and shape them into cookies, as they will not change shape as they cook.  Put the pan into your preheated oven and bake for 20-25 minutes.  Allow to cool for at least 10 minutes before eating.  Once totally cool, out into a storage container.  They will keep on the counter or fridge for about 24-36 hours.
